The price move over the window you chose. Green is up, red is down, and the stronger the colour the larger the move, up to about eight percent, past which it stops getting stronger because it has stopped telling you anything new.
The prices and colours are live, but the layout is worked out once from a captured snapshot. Market cap moves with price, so laying out from the live value would re-tile the map several times a second and every tile would jump while you were reading it.
The map covers the coins this site tracks, not the whole market. A coin with no market cap or volume recorded gets no tile, because a tile nobody can see is worse than no tile.
